Ingredients

6 small to medium potatoes (about 1.2 kg), washed and dried

225g shredded cheddar cheese

200g ground beef, seasoned and cooked

8 slices of bacon, cooked and crumbled

60g unsalted butter (about ¼ cup), melted

Safa Sour Cream, for topping

Chopped chives or green onions, for garnish

Salt and freshly ground black pepper, to taste

Instructions

Scrub the potatoes and get them in the oven at 200°C. Let them bake right on the rack for about 1 hour, until they’re fork-tender.

Once they’ve cooled a bit, slice them up!

Scoop out some of the insides, but leave a thick enough wall so they hold their shape.

Melt your butter and brush the inside and outside of the skins. Season with salt and pepper, then under the broiler for about 2–4 minutes until they’re crispy and golden.

Take them out, load each one with shredded cheddar and sprinkle the crumbled beef bacon. Slide them back under the broiler for another 3–4 minutes, just enough to melt the cheese.

Top them off with a scoop of Safa Sour Cream and a scatter of chopped chives or green onions. That’s it!
